Moodley-Meat Fried Rice

2 minced garlic cloves
1 tbsp rapeseed oil
1 cup diced carrot
1⁄2 cup frozen peas
3 cups cold cooked brown rice
1⁄2 cup chopped scallion
2 tbsp soy sauce
2 cups of diced leftover Roast

1. Fry Garlic in hot oil for half a minute
2. Add the vegetables and fry for about a minute
3. Add rice and soy sauce and fry for about another minute
4. Add diced leftover Moodley pieces and fry all ingredients for another two minutes
5. Serve immediately.
