Hearty Festive Casserole

300g diced Moodley Roast

1 onion diced

2 Carrots

1 tbsp butter

1 tbsp Rapeseed oil

2 diced potatoes

2 tbsp flour

600 ml water

Vegetable Boullion

Pop any other leftover Christmas veg into the dish too!

  1. Put the onion, carrots and potatoes in a casserole dish with 1 tbsp oil and the butter. Soften for 10 mins, then stir in the flour until it doesn’t look dusty anymore, followed by the stock.
  2. Add the Moodley roast and cook in a preheated oven for 2hrs at 140°C.
